Hint: San Francisco: Big air:

Choose the San Francisco level in multi-player mode. Have one
player drive under the tunnel and stop at the ramp. Sit on the
hill near the top and have the other player drive at high speed
and hit the first player. You will ramp on them and go flying.
If you go high enough and over the side, your screen will show
the bottom of the road and your friend's tire.
